RED WINE
Our first CIBI red is a pinot noir from Gembrook, in Yarra Valley.
Charming and lovely aroma of dark cherry and berry fruits. Soft velvety medium palate with bright fruits and chalky structure providing freshness.
Gembrook; Located at around 300ml elevation at the southern end of the Yarra Valley, much of the Gembrook subregion is situated on red volcanic soils, with small outcrops of granite scattered across the region.
Recommend to serve between 14-16 degrees.

WHITE WINE
Our first CIBI white is a blend of sauvignon blanc and a bit of Chardonnay. Sauvignon Blanc is harvested early and fermented on skin for 4 weeks before matured in old oak for 8 months.
It has a lovely crispness with good acidity, lemony with a hint of honeycomb, round body, perfect to enjoy as is and pairs well with CIBI food at the CIBI cafe. It is Not-so-SB-like-style white blend and we love it!
It will become your favourite white for this summer for sure!
Recommend to serve chilled.
