Our very first sake offered at CIBI, is proudly made in Meg's hometown of Okayama. Shiragiku Shuzo (Brewery) is located in Bicchu-takahashi district, an old Japanese town also home to the famous Matsuyama castle built in the 13th century.
Shiragiku Shuzo is situated in an area fortunate with a good climate, consistent access to high-quality rice and clean fresh mountain water along with the techniques essential for brewing their Sake by the Bicchu Toji "sake master".
We have brought a big "Taru" sake barrel, a very special junmai sake. It has a rich bouquet with a mild taste allowing for the appreciation of the full flavour of the rice with a well-balanced sharpness.

Meg's dad always has Shiragiku sake on special occasions. We are very proud to share our local brewery back in Japan to our locals in Melbourne.

Shiragiku Sake Brewery
Shiragiku Sake Brewery Co., Ltd. is a brewery located in Nariwa-cho, Takahashi City, in the midwestern part of Okayama Prefecture run by our friend, Shuzo-san, the proprietor and Toji (master brewer), Miyake-san. Okayama Prefecture, known for its delicious fruit, is often called the land of sunshine and the birthplace of “Omachi rice,” also known as “legendary brewer's rice. The combination of a great growing environment and pristine mountain water allows Shiragiku to produce sake that let the ingredients shine.
