CIBI WINE with Mac Forbes
A shared curiosity, a sense of playfulness, always on the lookout for the next adventure to enrich our everyday life. CIBI and Mac Forbes, friends working together, what better way to spend our days.
CIBI guided us food lovers to the delicious relationship of Japanese flavors and the European pantry, risotto cooked in dashi (a fish based stock made from bonito flakes and kombu) is now a go to for many home cooks. Following this pathway CIBI wine feels both destined and a refreshing surprise, exciting combinations and gatherings await.
About Mac Forbes
Long-time CIBI friend Mac Forbes creates a broad range of wines in the Yarra Valley, using grapes that he grows and tends with his team as well as grapes purchased from other regions. He is committed to regenerative agriculture in his growing practices, and to creating wines that are expressive of where the fruit is grown.
From Mac: “In creating Mac Forbes Wines back in 2004, there was a clear purpose to better understand and connect with where I am from. The more I have discovered over the years, the more I realise there still is to learn. Today, we are driven by curiosity and a passion for the nuances of this unique place. In each bottle of wine we offer a small snapshot of our evolving understanding of the Yarra Valley, and hope that through sharing these wines you will find joy and excitement in the stories they tell.”
