CIBI Miso Making Kit ー Make Your Own Miso at Home!

Making miso with CIBI’s miso kit is simpler than you might expect — and the result is a beautifully rich miso made by your own hands. If you love cooking, this is a wonderful way to experience the joy of making your own ingredients.

This is a brief guide for how you will be preparing your own miso using our kit. There is also detailed recipe included in the kit!

1. Soak, Cook & Mash: Soak soy beans overnight, cook until soft, then mash and mix with salt and koji.
2. Roll: Shape the mixture into firm balls, making sure to remove any air.
3. Pack: Press the balls firmly into the pot layer by layer and flatten the surface.
4. Ferment: Cover, add a weight, and leave to ferment in a cool, dark place for about 10–12 months.
