This is a brief guide for how you will be preparing your own miso using our kit. There is also detailed recipe included in the kit!
1. Soak, Cook & Mash:
Soak soy beans overnight, cook until soft, then mash and mix with salt and koji.
2. Roll:
Shape the mixture into firm balls, making sure to remove any air.
3. Pack:
Press the balls firmly into the pot layer by layer and flatten the surface.
4. Ferment:
Cover, add a weight, and leave to ferment in a cool, dark place for about 10–12 months.
