CIBI Recipe: Roasted shio-koji pork belly

Cooking with Nagatanien roasting pot donabe, the perfect way to enjoy wholesome winter dishes.

Roasted shio-koji pork belly is a simple, quick and delicious.
Rub chopped pork belly with CIBI’s Shio Koji, then cook with onions, garlic & herbs. That’s it!
A great main dish or addition to your stew mix, beautifully tender.

The Nagatanien Igamono Roasting Pot is a versatile donabe made for pot roasting and is also able to cook soups or stews The steady and even heat distribution is perfect when cooking over a long period of time to allow for the food to develop umami flavours. Unlike most donabe, this can also be heated without any liquid inside, making it ideal for dry roasting or stir-frying.

Recipe
1kg pork belly diced into about 5cm block
80g CIBI Shiokoji
1 medium onion sliced
2 cloves garlic
Some thymes & bay leaves

Method
Marinade pork belly with CIBI Shio-koji
Add oil to inside of roasting pot, cook both side of pork until brown (be careful not too add any cool liquid to the pot while it's hot as the sudden temperature change may cause the donabe to crack)
Add remaining ingredients
put the lid on and cook over medium heat for 10mins
Turn ingredients around, cook for another 10 mins,
Turn the heat off and let it settle for 20mins then it’s ready!
