Ukemi is a cutting board made of Japanese cypress, Hinoki, which is specially designed for cutting using sharp Japanese knives. It stays clean and flat for a long time, provided you wipe it with a dry towel and let it dry in a well-ventilated place after washing it. When it is worn out the old surface can be planed and it becomes just like a new one.
