This is a very special premium sake that is close to our hearts. Proudly made in CIBI's co-founder Meg's hometown of Okayama. Shiragiku Shuzo (Brewery) is located in Bicchu-takahashi district, an old Japanese town also home to the famous Matsuyama-castle that was built in the 13th century.

Shiragiku Shuzo is situated in an area fortunate with the good climate, consistent access to high quality rice and clean fresh mountain water along with the techniques essential for brewing their Sake.

"Omachi" is a sake rice specialty of Okayama. It has a gentle aroma and a rich taste. The rice is known as the phantom sake rice, is polished to 50% and brewed with great care by the Bitchu Toji (sake master). Junmai Sake is made out of just rice, koji and water. Nothing is added (like sulphites, sugar, or alchohol). This Junmai Daiginjo sake is aged at low temperature for a long period of time in the brewery, bringing out the full flavour and soft aroma unique to Omachi!

Notes: Full body, complex flavours, a bit of orange peel, very unique Omachi rice flavour

Shiragiku Sake Brewery

Shiragiku Sake Brewery Co., Ltd. is a brewery located in Nariwa-cho, Takahashi City, in the midwestern part of Okayama Prefecture run by our friend, Shuzo-san, the proprietor and Toji (master brewer), Miyake-san. Okayama Prefecture, known for its delicious fruit, is often called the land of sunshine and the birthplace of “Omachi rice,” also known as “legendary brewer's rice. The combination of a great growing environment and pristine mountain water allows Shiragiku to produce sake that lets the ingredients shine.
